What are “microgreens” at American farmer’s markets?
Microgreens are tiny edible plants harvested only one to three weeks after the seed sprouts, when the first true leaves appear. They started as restaurant garnish in the 1980s in Southern California and spread to home cooking through farmer’s markets in the 2010s.
