What is Israeli “salat selek”?
סלט סלק (salat selek) is the Hebrew name for cold beet salad, but the cultural angle is the bigger picture: Israeli meals open with a constellation of small cold salads called salatim. Hummus, matbucha, eggplant, carrot, cabbage, and almost always salat selek alongside.
