What does “kiş” mean in Turkish?
This recipe makes a French classic: «Fransız mutfağının eşsiz lezzetlerinden ıspanaklı mantarlı kiş» (“spinach-and-mushroom quiche, one of French cuisine’s unique delights”). Kiş is simply “quiche”, and the spelling is the lesson.
Turkish writes foreign words the way they sound: French quiche becomes kiş, because Turkish ş makes the “sh” sound and spelling follows pronunciation almost perfectly.
